Pai Mu Tan is one of the most classic and best white teas. He comes from Fujian, the southeastern province of China. Pai Mu Tan is a mix of young leaves and buds of the da bai bush, as well as shui xian bai. Harvesting takes place at the beginning of spring - in March and April - and this task requires great care - be careful not to damage the delicate tea twigs. The name Pai Mu Tan, or White Peony, comes from the similarity of the buds and leaves of the mixture to this popular flower

Pai Mu Tan is characterized by a floral fragrance, clean and greenish, almost slightly golden color of the infusion, as well as a refreshing and pleasant taste. Pai Mu Tan is also sometimes referred to as the elixir of youth - due to the high content of antioxidants. It is also a rich source of vitamins - including vitamin C and polyphenols.

Pai Mu Tan is a good proposition for people who are just getting to know the world of teas - it is easy to prepare and does not require such restrictive guidelines as other types of tea. White Peony allows you to experiment with both the temperature of the water and the brewing time. It is only important not to flood the leaves and buds with boiling water, but with water at a temperature of 70-90 * C. For a 200ml cup, 1-2 teaspoons of Pai Mu Tan leaves are recommended. Brewing time should be adjusted to individual preferences: 1-7 minutes - depending on how strong the brew you want to get. Then strain the leaves and bud and enjoy a cup of excellent tea.
