Kimchi is a traditional Korean vegetable speciality. Originally, just like sauerkraut, fermentation was used to preserve vegetables. This tradition in Korea dates back up to 3,000 years. Around 10 years ago, kimchi was added to UNESCO’s list of Intangible Cultural Heritage.

Traditionally, kimchi was made with Chinese cabbage, as it was available in large quantities. Today, there are many delicious variations.

This is why ARCHE Kimchi differs from classic kimchi. It is made from white cabbage, which we can source regionally from Germany. In addition, white cabbage has a longer growing period than Chinese cabbage and can be stored better. We also do not use gochugaru (a special Korean chilli), as it is not available worldwide in certified organic quality.

ARCHE Kimchi, made from white cabbage, carrots, onions and spices, has a spicy, piquant and fresh flavour. It is a versatile side dish for soups, wraps or bowls, as well as for Korean mung bean pancakes, with or without meat, or in a vegan version. ARCHE Kimchi can also be enjoyed directly from the jar without any further preparation.

To ensure shelf stability, ARCHE Kimchi is gently pasteurised for a short time at the lowest possible temperatures.
