The aromatic, slightly hot, piquant Thai curry paste from the south of Thailand.

Mix 2 cups coconut milk (about 400g) with 50g curry paste and heat in a pan.

To make a marinade, simply add a little warm liquid to one of the pastes, stir and use to marinate tofu, seitan or vegan alternatives to meat.

To use in soups, sauces or with soy chunks, simply sweat the sauce briefly in a saucepan or frying pan before adding liquid. For an absolute classic, combine it with coconut milk to make a curry: the sweetness of the coconut harmonizes wonderfully with the heat from the curry paste.
