Vegan gelling agent from seaweed

Agar agar, also known as kanten, is an organic gelling agent made from red seaweed. It is a vegan substitute for gelatin (animal tissue). Great for delicious cheesecake, jelly or pudding.

Agar agar is a vegan and organic gelling agent with an enormous binding power. You can compare it to gelatin, but agar agar is even more powerful. Agar agar is made from 100% red seaweed and is also known as kanten. You can make delicious vegan cheesecakes or (sugar-free) jelly with it. Add agar agar when your liquid is warm, otherwise lumps may form. Because agar gels at room temperature, it is important to work quickly! Also try the other Japanese binders: kuzu or arrowroot.

The binding power of agar agar is at least twice as strong as that of gelatin. For an average consistency, use 3-4 g per 500 ml with thin liquid. For a hard consistency use 5-8 g per 500 ml and for a soft consistency use 1.5 g per 500 ml. Add to your mixture when the liquid is warm and stir quickly to avoid lumps. Let it simmer gently for about 2 minutes. Allow to set for 1-4 hours.

After opening, store airtight in a dry, dark place at room temperature (max 20 ° C).
